My signature.

It’s occurring to me that I seem to have a signature cake recipe that I get asked for. Looking back it is the one I’ve made the most. And it’s also the most versatile.
The original recipe calls for fresh whipped cream flavoured with vanilla syrup. And fresh raspberries. But I’ve made it with vanilla buttercream and cream cheese frosting which have both worked perfectly.
I’ve used raspberry jam or homemade raspberry compote instead of the fresh raspberries too.

I’ve made it for birthdays and for high tea. With fresh cream it would make an amazing wedding cake that could double as desert.

All in all it’s the perfect cake!
