High end wedding cakes with a twist.

You may well have seen the phrase .high end wedding cakes with a twist’ on my Instagram and email signature. It’s become my tag line, as it seems to sum up what I do perfectly. But what does ‘High end wedding cakes with a twit’ mean?

Let me explain.

High end weddings and wedding cakes are what I do, I work with discerning clients who know what they want. And what they want is something a little different, a wedding cake with a twist!
Usually my clients are looking for a high end, luxury wedding cake, but they also want to have something that reflects them, their personalities and their passions. This may mean hand painting their pet Guinea pigs around one of the cake tiers, or designing and hand cutting a custom stencil.
My clients are classy, but a little quirky. They want their wedding and their wedding cake to be elegant, but to also be creative and a talking point. And it’s my job to get that balance just right.

Now I’m not talking full on themed wedding cakes here, or the sculpted novelty cakes, although I know fellow cake makers who are amazing at those and I can put you in touch with them.
For me the twist is taking the traditional wedding cake and making it stand out and also making it truly personal to you. Often the cake is the part of the wedding that people feel they can get more creative with, without going to OTT. A subtle nod to something, even if that something means nothing to anyone but them. In fact that makes it even more special.

How many times have you seen a pretty wedding cake online and thought ‘that’s lovely, but…’ Or it’s so similar to every other wedding cake that comes up that you can’t tell who made it or who’s wedding it was?

Now there is nothing wrong with this, in fact I love the pretty, traditional, wedding cakes. And these can be exactly what is required for some weddings.
Where I come in is when a couple wants something just that little bit more unique. So maybe that’s a stencil of the details from your wedding stationary, or the lace or detailing from the wedding dress or suits. How about matching the sugar flowers on the cake to the wedding flowers? Or a hand painted scene of a favourite place, maybe the beach where you got engaged? All of these things can be included in the wedding cake design, and these are what adds the ‘twist’.

And then there’s colour. You may have noticed that I love colour. And there is no reason why you can’t have colour on your wedding cake. In fact I encourage it. These days the edible colours are amazing, and it’s possible to create any shade you need. Something I pride myself on is being able to colour match the fondant for the cake to any colour you give me. Quite often a couple will give me a swatch of fabric, ribbon or one of their invites and ask me to colour match these on the cake. This is another way to make the wedding cake really personal to each couple.

I can also cast moulds of things like shells, broches, personal trinkets or other items being used in the wedding décor or table settings. These will be completely unique to you and your wedding and can become a keepsake if made in cold porcelain rather than sugar. In fact, the flowers for the cake can also be made in cold porcelain and then kept forever. What a beautiful thing to be able to keep.

Another way to add that personal and creative twist to your wedding cake is with the wedding cake topper.
These days there are literally thousands of options for a topper, not just the traditional bride and groom. How about including the whole family, even your pets? And you can keep it classy, there’s no need for the generic, plastic figures anymore. Or keep it simple and have an acrylic or wooden topper commissioned with your names and wedding dates, these also make a nice keepsake of the day.

I find my clients tend not to want the traditional figures on top of their cake, but some still want a topper. This is again where the high end with a twist comes in.

I spend a lot of time working with my clients and their ideas to make sure their wedding cake is exactly how they want it. And this includes the cake topper. I am always happy to source the topper, and to help you think a little differently about what can work. For example, I have a lovely little pair of elephants with their trunks forming a heart. It wasn’t sold as a cake topper, but I knew it would work, so I bought it to have in stock. On a trip to America once I picked up a cute pair of silver starfish that also make an adorable wedding cake topper.

How about commissioning a custom sculpture for the top of your cake? This can then become something to hand down as a family heirloom for future weddings. At our wedding we used the cake topper that was my maternal grandparents, that my mother and aunt had also used at their weddings. There are so many options.

But I’m getting off topic.

High end with a twist wedding cakes. And weddings. These are what I live and work for, this is where I am your perfect cake maker (shameless self-promotion).
But seriously, your wedding should be just that, yours. And having a high end, luxury wedding means you have the budget to have exactly what you want. So there is no need to settle for a copy/paste of the latest Instagram trend. After all, it won’t be a trend for long, but your memories of your big day will last a lifetime. So they need to be perfect, for you.

Luxury Wedding Cakes- Finding the Right Wedding Cake Maker

Finding the right wedding cake maker for you doesn’t have to be stressful

Well I was going to begin this post by asking if you were all enjoying the beautiful weather! Sadly, it’s now freezing cold and raining, normal British summer has resumed. But what better weather to be indoors planning your wedding? And today I’m not going to talk about choosing your ideal wedding cake, but choosing your ideal wedding cake maker.

Your wedding is a time where you will be getting a whole range of bespoke services, and they all need to work together to bring your vision to reality. And, as you know, whenever you have anything custom made, you need to form a relationship with the creator. Most of the services you need for a wedding you can’t get by just popping to the shops.

This means you will be in regular contact with your suppliers right up to, and maybe including, the big day. So you need to feel 100% comfortable with them, and trust them to deliver your vision.

Now, at the moment, it’s still not really possible (or safe in my opinion) to be meeting up for face to face consultations. And that’s often not possible anyway. I would say around 75% of my clients are holding their weddings or events in the South West, but don’t live here. We are very much a hot spot for destination weddings.

So how do you go about finding the right wedding cake maker? Especially when we can’t do wedding fairs or meet with each other? And how do you even start looking?

Firstly decide what kind of wedding you want.

By this I mean are you wanting an intimate, micro wedding, or a big affair with the whole shooting match? Are you thinking pastels and lace and romance, or are you thinking bright and bold? Boho/rustic or high end glam? The list goes on.

Confused?

Don’t be. Even if you don’t think you know what you want, chances are you actually do. Just take a look at your Pinterest boards, I bet there’s a lot they all have in common. The colours and styles you are being drawn to and saving will form the basis for your wedding style or theme. And, let’s be honest, most of us have known the kind of wedding we want for years. I can still remember saying I wanted a gold wedding dress when I was around 14. When I was 26 and getting married, guess what? Yep, my dress was a beautiful, matt gold slugged silk with a red bodice (there’s a wedding pic HERE if you want to see it.)

Whatever your vision, there will be the perfect team of suppliers out there to create it for you. You just have to find them.

For many the starting point for any search is good old google (other search engines are available) But what are you searching for?

My advice would be to be a niche as you can with your search terms. Just typing ‘Wedding Cakes’ into google with make your head explode with the number of results you’ll get. So try to narrow it down. Start with the geographical area in which you’re getting married, ‘Wedding Cake Makers South West.’ You’ll still get tens if not hundreds of thousands of hits. ‘Wedding Cake Makers Cornwall’ will bring you a little closer.

And don’t just look at page one of search results, we aren’t all able to be on page one all the time. Some of the smaller, hidden gems, will be on pages 3 or 4 or even further.

You can then narrow things down even more but adding other keywords into your search and so on, I’m sure you already know all this. But there are a lot of search terms that are unique to the wedding industry, especially with dresses and accessories. If you can find out the name of the shape of dress or colour of shoe you want, that’s a big help. I never knew there were so many names for so many dress shapes and colours until I joined the wedding industry.

Back to cakes though.

You may want a white wedding cake with pink sugar flowers for example. So ‘Sugar flower wedding cakes Cornwall’ might be a good starting point. Or you may want a black wedding cake, or a semi naked cake. Whatever your choice, use that with your geographical area, and you’ll get a good range of results.

Another popular way to find suppliers is the online directories.

Although simply finding the right directory to search in can be a full-time job in itself! There are so many of them now. But again, there are ways to save time and narrow things down. Only use ones that cover the area in which you’re getting married for example. Sounds obvious? But I’ve had so many people contact me over the years who haven’t looked to see where I’m based. And this is important if you are getting married away from home. Your dress you may want to get locally to where you live because of fittings etc, but the cake will be something it is best to get from a cake maker closer to where you are getting married. Although many of us will deliver UK wide.

Personally there are a few directories I would recommend trying first, And I’ll list these at the bottom.

A tip for directories.

A top tip for using a directory to contact a supplier is to ignore the enquiry form they sometimes have on them. These send us a generic, often slightly irrelevant, automated message like ‘Hi, we are interested in your services, please send us your brochure.’

It gives us very little info and is usually rather impersonal. If you get emails like this, I bet they are the ones you assign the least amount of time to? And they will sometimes go straight to spam and get missed anyway. It also makes it seem like you aren’t really that interested in us, but are just throwing a net out to see who replies.

Instead click the link to the suppliers own website and use their own contact form. This way you know your message won’t get lost, and will give your supplier the information they need. Even better drop us an email. Emailing us direct will also allow you to send us your mood board links etc, which will save time later down the line.

Should you contact more than one wedding cake maker at a time?

This goes for any supplier really. And of course you can if you wish. No one would expect you not to have a good look at all your options. Especially not for your wedding. Personally I always reply as soon as I can to all my enquiries, and I never expect or assume I’ll be the chosen cake maker. When you have made you decision, just drop the others a quick ‘thanks but no thanks’ email so that they can open that date back up.

Another option is the recommended supplier list from your wedding venue.

Not all venues have this, but it’s always worth asking if they do. Some will have a list on their website, others will simply have people they like to work with who they will tell you about if you ask. In fact this goes for all suppliers. I have a mental list of other suppliers I’ve worked with over the years that I would recommend, and do when I’m asked. And so will your florist, DJ, caterer etc. We work with all these people and get to know them, and their work, really well.

Word of mouth in any walk of life is probably the best way to find the best people. So if your venue or another supplier is recommending a cake maker to you, then it’s worth checking them out. There will be a page coming to the website soon of all the other wedding suppliers I love to work with.

Then there is your wedding planner.

If you are engaging a wedding planner then make full use of their little black book of contacts, they all have them! Your wedding planner will know which suppliers you’ll get on with, and will fit your style. They will often work directly with us too. So we also trust them to bring us clients that are a good fit for what we do. If a trusted wedding planner puts a couple my way, I know they will be my kind of people, and vice versa. If you wanted a novelty wedding cake, for example, they will only put you in touch with cake makers they know do those (I don’t by the way, but I know a few who do.)

A wedding planner is also a good idea if you are having a destination wedding, as I’ve mentioned before. Hiring a wedding planner local to where you are getting married will save you a lot of time and stress, as they will know all the best local suppliers, and also the ones to avoid!

 

Finding ‘the one’

Finding the perfect wedding cake maker for you is the same as finding all the other suppliers. The bonus with us is that you will get to try cake ?

A lot of it is going to come down to that gut feeling you get when you speak to us. And if you have followed the above advice you should have narrowed your choices down to those cake makers who fit your style and budget. Only you know what’s most important to you when it comes to your wedding. So trust that voice that tells you that yes, you like this one, they get you and make you feel relaxed. If you don’t get that feeling, however stunning their work might be, you won’t be as relaxed.

Something I try very hard to do is not only reply swiftly, as I know your wedding is a big deal, and you want answers asap. But I also make sure I build a relationship with my clients, and to put them at ease so they know that they can trust me completely.

Top tips for finding your perfect wedding cake maker

1/ If you’re using google then niche down your search terms as much as possible. This will give you less results to have to wade through.

2/ Directories are a good resource. Find ones that cover the area in which you are getting married.

3/ If you do use a directory avoid the autofill/auto message forms. These often go to our spam. They don’t give us much info, and tend to be very impersonal. Better to click through to the suppliers website and contact them directly.

4/ If you are contacting more than one cake maker then remember to let the others know when you’ve made your decision, so that they can open that date back up.

5/ Check with your venue to see if they can recommend a cake maker (or any other supplier) As direct recommendations like this are always better.

6/ If you are using a wedding planner then tap into their local knowledge of the best suppliers.

7/ Trust your instincts. If you find a cake maker you click with, then book them, quick!

Have you ever seen wedding cake photos on blogs and in magazines?

The wedding cake photos you see online and in magazines will almost certainly have been taken at a wedding photo shoot. But there are things you can take from them for your own wedding.

A couple of weeks ago I came blinking out of the house and into the daylight.  We in the UK have been told we can go back to work as long as we still follow all the rules, which meant I could go back to the studio. Although I could have gone before, as I work alone there, I had been extra careful. But last week I had good reason for going back, and it was to meet with the lovely Helen Chapmen for a ‘lock-down photo-shoot’ to get some wedding cake photos for her blog. Helen is a wedding photographer based in Devon. We have worked together before on a wedding photo shoot you may remember me blogging about at Bicton Park Botanical Gardens (beautiful and worth a visit when they are back open)

Helen had asked if she could come to Clovelly to take photos of some of my display cakes I keep down there. Although Clovelly is still very much closed, my studio is up top in the main car park. So we didn’t need to go into the village or near anyone. There was just the two of us, and I doubled as assistant (those big reflectors have a mind of their own!)

It was great to be back in my happy place/work space. But it did feel strange with no visitors. No bad thing at the moment though, and it meant we could get outside to make the best use of the area immediately around the studio. And of the beautiful weather. We were able to find the perfect backgrounds for each cake.

The backdrops to your wedding cake photos is very important.

 

Sadly this is something that is often overlooked. I’ve lost count of how many times I’ve set a cake up at a wedding venue and there’s a radiator, light switches, fire exit, plug sockets, fire extinguisher in the background. And I just know they will be visible in the cake cutting photos. Or the cake table is in front of a window, which will mean the bright light can wash out the photos. Not to mention that this is a pet hate of mine, sunlight through windows, you might as well put your wedding cake in a greenhouse!

 

When you visit your venue have a think about where to set up the cake table.

Too often they seem to have just been plonked down as an afterthought. So take a few minutes to look at where would be a good spot, with a good backdrop, to set up the cake. And have the photos in mind when you do. Discuss this with the venues wedding coordinator,  wedding planner or stylist.

If you’re having a very elaborately decorated cake, then a plain background might be best. You want the cake to stand out and not disappear into a busy backdrop. If the cake it a plainer white or ivory, then a darker background would help it stand out.

Insider knowledge.

Doing wedding photo shoots a lot has given me the chance to see how photographers work, and how they place and arrange my cakes to get the best shots. I’m also lucky enough to have a few photographer friends too, who I can ask for advice on staging.

And this is something I would recommend.

Have a good chat with your photographer about all your ideas. There’s a high chance your photographer will know your venue and have shot weddings there before. So they will already know all the best places for photos, and where the best light comes from.

Even better would be to meet with your photographer at your venue and do a walk around with them (there may be a charge for doing this)

Also talk to your cake designer.

We stage wedding cakes week in and week out, so we know a few tricks. I’ve already mentioned my pet hate of cakes in windows, especially semi naked and buttercream cakes in high summer! (can we say hot mess??)

Another thing I often see is the cake table in an alcove or a corner of the room. While this is good for the safety of the cake, it won’t get knocked into for example. It also means you can’t properly get alongside the cake for the cutting photos. You end up crammed against a wall trying to cut the cake.

 

But back to the wedding cake photo shoot.

Something that I found very interesting was the time Helen took to make sure the light was just right. And the big difference the light reflector made, even though it was a sunny day. Now I know you can’t have someone wielding one of those at your wedding. But it is worth making sure there’s a good natural light source into the area you want the cake setting up, not bright sunlight though (see above.)

You’ll also notice that most of these photos have been taken outside. Wedding cakes outside is a whole subject by itself (I wrote about it here) Because these are all display cakes, they are much lighter weight and less fragile than a real wedding cake will be. But you can move a wedding cake outside for photos as long as you know what you’re doing. If this is something you think you’d want to do then chat to your cake maker. We will make sure we add extra internal supports, and give detailed instructions on how to move it. We might be able to stay and move the cake for you if that can be arranged (again there will be an hourly charge for this).

 

Photo shoot V reality

It’s important to keep in mind that the photos you see in any shoot are there to give you inspiration and ideas. They are not supposed to represent a real wedding necessarily.

For example it’s very unlikely that you would have a flataly of your stationary as part of your wedding photos. Those are there to showcase the stationers work, and the work of the other suppliers involved in the shoot.

What a photo shoot will give you is a really good idea of the quality of work of the suppliers, if they are your style or not, and help you decide who you want to work with for your wedding. They are also a great way to get a good feel for the style you can expect from the photographers involved. Do you like the way they have used light, or the way they have posed their models for example.

Top tips for getting good photos of your wedding cake

1/ Talk to you photographer about where in the room is best for the cake to be for them to be able to get the best photos.

2/ Chat to your wedding planner or stylist about setting up the cake table. Being creative with the table set up can be very effective.

3/ Make sure the backdrop compliments the cake, and doesn’t fight it for attention.

4/ Avoid harsh and direct sunlight. It’s bad for photos and very bad for the cake!

5/ Avoid dark corners too. Too much shadow will hinder the photographer, and you won’t see the cake at its best either.

6/ Make sure there will be enough room for you both to be able to stand comfortably beside your cake for the cutting photos.

Luxury Wedding Cakes – Wedding Cake Trends 2021/2022

Everyone loves a good trend, don’t they? And wedding cakes are no different. So today we are going to look, briefly, at wedding cake trends for 2021/2022.

Generally trends take longer to emerge and change in weddings than most areas. This is because weddings are planned over many months, even years. And there are also a lot of traditions within weddings that people don’t like to mess with too much.

Now I think it’s safe to say that most people are no longer planning a 2020 wedding, for the obvious reasons we don’t need to go into here. But I have noticed that lots of people are using this time to plan their 2021 and 2022 weddings. And it’s the perfect time to do it. Just remember that you’re going to be competing with all the 2020 couples who have had to postpone their weddings to 2021/22 dates. So my advice not to leave it too long to book a supplier you love is even more relevant now.

Having said that trends within wedding take longer to change. One area within weddings where trends do come and go more quickly, is the cake.

The days of the wedding cake being a rich fruit cake coated in thick marzipan and rock hard royal icing have long gone! Although, saying that, fruit cake as one of the tiers is starting to creep back. And this is the thing with trends, they often revisit what came before, but add a contemporary spin.

With all of this in mind, what can we expect to see from wedding cake makers over the next year or two?

 

Back in 2018 we started to see a move away from the traditional wedding cake as an actual cake. Replaced with cheesecakes, cheese stacks and even pork pies! Thankfully this trend didn’t last. Although the stacks of cheese and pork pies are a great buffet idea.

The wedding cake if firmly back where it belongs. But it isn’t a plain white tower that fades into the background anymore. And this brings me to my first trend for 2021/22

 

Colourful wedding cakes

It’s long been a thing to use a coloured ribbon around the base of the cake, or the cake board, to match the wedding colours. But why stop there? These days you can have the icing in any colour you could think of. And I can colour match to your exact colour scheme. You can also paint on cakes. The trend for the watercolour effect on wedding cakes is one I can see becoming bigger too. It’s a great way to bring your wedding colours into your cake in a more imaginative way.

Dramatic wedding cakes

Think black wedding cakes. Yes, I said black. A black wedding cake can look stunning, and really add that touch of the dramatic, especially if you don’t want a fully themed wedding, but do want some statement touches. If you don’t want black then maybe introduce some interesting and unusual textures like the concrete or stone effect. A real talking point for your guests.

Personalised wedding cakes

Bring some of your personality into the wedding with a personalised wedding cake. Of course the double sided wedding cakes have been around a long time. They were cute when the trend first started, but can look naff if not done just right. Forget those. Instead think back to what I said about hand painting on cakes. Or what about a hand cut stencil to match a design you may have on your stationary? As this would be a one-off design it would be truly yours.

Floral wedding cakes

Now if you know me, then you know that I adore sugar flowers. But there are lots of alternatives without using fresh flowers (which can come with a health warning). Wafer paper flowers are a great alternative to sugar flowers, and something I predict becoming a new trend for wedding cakes. Then there are pressed and dried flowers. Dried flowers like roses and lavender can looks beautiful, and smell nice too. Plus they are already dried, so you can keep them afterwards. I also love to press edible flowers. Because they are edible, they can be put directly onto the cake. For 2021/22 I can see dried, pressed and wafer paper flowers overtaking fresh flowers on wedding cakes.

Staying around

There is one wedding cake trend I can see staying around.  I’m talking the semi naked cakes and buttercream cakes. I think these are going to stay around for a while yet. But with a twist. Remember what I was saying about fresh flowers on cakes maybe being replaced? I certainly think this is a good idea on semi naked and buttercream cakes. And once you move away from fresh flowers, you open up a whole world of possibilities, dried or dehydrated fruits and foliage for example. Buttercream can also be tinted many colours, and can be piped into amazing flowers and other designs, it can also be textured in many different ways. Then there are wafer paper flowers and foliage.

So there you are. A brief waffle on what I think we are going to be seeing in the wedding cake world over the next year or two. Get creative with your wedding cake design and let your personalities shine, give your guests something to delight the eye, not just the stomach. And remember, the cake is one of the most photographed things at a wedding, so make sure it’s worthy of all the attention.

Luxury Wedding Cakes Cornwall and Devon: Having a Wedding Cake at an Outdoor Wedding.

It’s early April 2020 and we are all on lock-down/self-isolation. But it’s a glorious day outside, which got me thinking about having a wedding cake at an outdoor wedding.

 

In the UK you can’t, as things stand currently, have a fully outdoor wedding. There must be some kind of permanent structure, with a roof, that will hold at least the minimum 5 people needed to legally marry. This is why many wedding venues have pagodas etc in their grounds, usually open sided so that it’s as outdoors as possible.

Or you can do the legal marriage somewhere else. Then have a fully outdoor blessing, hand-fasting, or celebrant led ceremony.

However, I’m a wedding cake maker. And so my focus is going to be on the cakes with these kinds of weddings.

 

Can you even have a cake at an outdoor wedding?

Unless there is an extreme heatwave, then yes you can, with a few considerations.

Now I’m not going to say that you can’t have a certain kind of wedding cake if you are having an outdoor wedding. It’s your wedding, you can have exactly the cake you want! But there are types of wedding cakes that will work better than others.

 

Firstly I would avoid the fully naked wedding cakes.

 

These are the ones with no icing or buttercream at all on the outside, just the bare cake on show. This type of wedding cake dries out quit fast at the best of times, put it outside and it will dry out even faster. And no one wants a dry cake.

Semi naked wedding cakes will cope a little better, but not if it’s hot. Buttercream, of any type, wants to melt. It’s why I won’t set a cake up by a heater or open fire etc. Or directly in front of a window getting full sun. you’ll have a sticky mess in no time.

Plus it’s only buttercream on the outside, and buttercream can get sticky. If you’re wedding cake is set up outside then there will be dust, pollen, grass or even sand floating around. If this sticks to the buttercream, then you’re going to be eating more that just the cake.

Your best option is a fondant covered cake for an outdoor wedding.

 

Think of the fondant (sugar paste) as armour. It will be protecting the cake inside from the elements, and anything floating in the air. Once the cake is cut the fondant can be pulled off, and the cake inside will be perfectly okay. Of course you can eat the fondant too.

 

This is not to say you can set a fondant wedding cake up just anywhere outside.

 

The ground needs to be level. If it’s not, then the cake will look wonky. And you may have stability issues too. If the cake table is standing on uneven ground, then it’s going to be unstable too. The same goes for log slice cake stands. You’ve seen me mention them before. Make sure they are properly prepared and level or you’ll have a wonky looking cake.

The cake needs to be set up in the shade. Even with a fondant cake it will still need to be in the coolest place you can find. Fondant is sugar, and sugar doesn’t like heat. I always keep all wedding cakes as cool as I can before delivery, and will often travel with ice blocks in the car with them. Once it starts to warm up though, the cake will start to soften, the fillings will start to soften, and we need to avoid that for as long as possible. Even though the cakes will have their supporting dowels, this won’t guarantee that nothing will move if the cake gets too hot.

THINK WASPS!!!

 

I hate wasps, and it’s mutual (is there actually any point to a wasp??).

A wasp sting will knock me off my feet for a good 24 hours. And wasps LOVE sweet things. Therefore they are going to love your wedding cake! I have seen a whole swarm of wasps on a cake before (not one of mine, but online) and it wasn’t nice. You certainly won’t be able, or want, to eat it after they have finished with it.

Again, a fondant covered cake will offer some protection. They will only be touching/attacking the outer covering, and not the cake itself. So if the worst happens you can pull the fondant off and the cake beneath will be fine.

It’s the same with flies.

Okay I know I sound like I’m raining on your parade, sorry about that. That’s not my intention. I want you parade to be as glorious as possible!

 

If you want to have the wedding cake outdoors, then I would recommend having it brought out just before you want to cut it. This way it is not out for too long. Discuss this with your cake maker, and make sure you have someone on hand to carry the cake out at the appropriate time who knows what they are doing.

The other option would be to have the cake table set up under semi cover. Which brings me to my next point.

It might rain.

 

Yep, it’s the UK. Rain is highly likely let’s face it. So having the cake set up outside will mean someone has got to try and quickly get a heavy wedding cake under cover, without dropping or damaging it! I certainly wouldn’t want to do that!

Some kind of semi cover is a good compromise. Maybe a small, open sided marquee or gazebo. Or if the venue has a summerhouse or covered patio, that would work well. Even under a large tree. Plus, there will be somewhere for everyone to shelter should the great British weather do its thing.

Here are my top tips for having a wedding cake outdoors.

 

1/ Have the cake in the coolest, and shadiest place you can find. In semi cover is best.

2/ Make sure the ground is level before setting the cake table up.

3/ Be aware of wasps, flies and general air borne dust and dirt.

4/ Have a fondant covered cake to help protect the actual cake underneath.

5/ If the venue has a room that looks out over the site of the wedding, where the cake can be set up, but everyone can still see it, that’s the best option of all.

Luxury wedding cakes: The cake ordering timeline explained

A recent enquiry from a couple getting married soon got me thinking.

They wanted to know if I had availability for their date as they hadn’t heard from their cake maker for several weeks They were getting worried they might be left without a cake.

This made me think about the timeline of the whole cake ordering process. And what to expect in terms of communication from your cake maker. Also what we need to know from you. After all we do this day in and day out, but it’s new to you.

In the early stages there are emails/messages being exchanged regularly (with one bride we exchanged 148 emails!).

I try hard to make sure I reply to all emails within a couple of hours (this isn’t always possible, so please don’t hold me to it.)  I’m aware you are wanting the answers to your questions asap. I’m also aware that you many not get the time to sit down and get to your wedding planning until after work.  This isn’t an issue. I’m not saying I work 24/7, but we all live and work in a 24/7 world now.

So if I am available at 9pm to reply to an email then I do. If not then I will reply first thing the next morning. The only time there will be a delay in responses is when there is a time zone difference involved, this often happens when my clients are based in other countries.

The Process.

You will send me an email or fill in the contact form on my website with your enquiry. When doing this it’s really helpful to give me the date and venue of the wedding, then I can check my availability before replying. If that date is already booked I may be able to give you the names of other cake makers I know and trust who may be able to help.

I pick up your email and reply. I will ask you your wedding date and venue, (if you’ve not already told me that.) I’ll also ask if you know, roughly, the numbers the cake will need to be for, and if you have any ideas on style. This will give me the information I need to start putting a quote together for you. Usually I will be back in touch with that quote within 24 hours, unless there are other things I need to check, or unusual requests I may need to research.

I’ll get a quote back to you and if you want to meet with me, then we will arrange that too. I’ll also answer your questions, so don’t be afraid to ask anything.

Once we have met, you’ve tasted your chosen flavours, and discussed design, I will leave you to decide if you want to go ahead and book with me. If, in the meantime, I get another couple asking about your date then I will be back in touch sooner. If you’ve already enquired about a date, then you get first refusal on it.

What’s next.

If you decide to book, then I’ll give you the details you need to pay your booking fee (you cake isn’t booked in until that has been paid.) I’ll also check all the details I have so far. I will ask the time of the wedding so that I know when I need to deliver and set up your wedding cake. I will ask if there is a designated contact at the venue that I need to know about, and their contact details

.

You pay the booking fee, I confirm I’ve got it and that you’re booked in, and give you the date you need to pay the balance by (no later than 14 days before the wedding). I’ll also refer you to my Ts&Cs as by paying the booking fee you are agreeing to them.

Easy as that.

And really that’s it for now. I will know everything I need to in order get your wedding cake booked in and order whatever I need to for it etc. From my side I will have no need to get in touch until about a month before the wedding.

At that point I will get back in touch and confirm everything with you. As long as nothing has changed with your order then I’ll get on with everything and leave you in peace to enjoy the countdown to your big day!

However that doesn’t mean you can’t get in touch with me. You can email me at any stage about anything that is concerning you, and I will always be here to answer your questions. Remember there is no such thing as a silly question.

Time to panic?

So when should you be worried that you’ve not heard anything from your cake maker for a while? Well this depends. Did they tell you that they would be in touch? I always tell my couples that I will be in touch around a month before the wedding to check in and confirm everything is still the same with their wedding cake.

And I always ask that if things do change to let me know asap, so if you change your mind about flavours, colours etc, it’s best to communicate that straight away.

If your cake maker has said they will be in touch but then hasn’t.

I would drop them another email. And mark it as urgent.

You may get an ‘out of office’ response. So they will be in touch, just a little later. Maybe they have gone on holiday before wedding season kicks in and they won’t see daylight for weeks. I often have to pop up to London for a night or two, and the travelling (train wifi isn’t all it could be!) and meetings with couples can mean I’m a bit slower with replies.  When this happens an autoresponder should ping back to you letting you know what’s going on, and telling you when you can expect to hear back.

But what if you have been trying and trying to get hold of your cake maker (or any supplier) and haven’t had anything, not even an autoresponder?

The first thing I would do is pop to their website and social media. Are they still active?

If yes, then it’s likely they will get back to you. Your email may have gone to their spam, or they may simply have missed it. So drop them a message on another platform and let them know that you’re waiting for a reply.

Still nothing? And no recent online activity? Then have a word with some of your other suppliers. The chances are they will know each other.

The wedding industry is a very friendly place, and we all get to know each other quite well. So I’m sure one of your other suppliers will have heard if there is anything to worry about.

Back to the email that I received that got me thinking about writing this post.

I heard back from that couple. Their original cake maker didn’t get back to them, so they are going with me. This did make me realise that, unless you know the process, it might be easy to panic and think something has gone wrong. In this case it had, but in most cases everything is fine.

Did they do the right thing by getting in touch with me before they heard back from their original cake maker? As they explained the situation, that they were just seeing if it would be possible to get something done at fairly short notice. Then yes, I think they did the right thing. It’s completely understandable that they were getting worried.

What I would say is that it is completely normal to book a supplier and then not hear anything for a while. We aren’t ignoring you. And have vanished or gone out of business. We have got all the information we need from you to be able to start work.

And as weddings are usually booked many months ahead, it’s quite normal for things to go quiet for a while. But if you are worried then drop us an email or go HERE. It’s always a pleasure to hear from you ?

Luxury Wedding Cakes- Does Wedding Cake Size Matter?

Now stop giggling at the back! I’m talking about your wedding cake size!.
In my last post I talked about the things that seem to stress couples out when it comes to the cake. Making sure you order the right size of cake seems to be one of the biggest worries. Understandably so, I mean you don’t want to seem mean, but don’t want wasted cake either. And the chances are you’ve not ordered a wedding cake before to know about serving sizes and cutting guides.
This isn’t anything to worry about though. Your cake maker knows the drill, and we know how to work out what is the best size cake for the size of wedding. Really all you need to do is give us the number of guests you want the cake to serve.

Which brings me to another issue.

When to serve the wedding cake?

Traditionally the cake was cut and served after the speeches, at the end of the main wedding breakfast. If there was any left, then it would be offered to evening guests as part of the buffet.
These days though many couples want to wait to cut the cake in the evening. Personally I like this idea, as it is a big part of the day, and something the evening guests would usually miss out on. Cutting the cake in the evening includes all your guests in that special moment. However, cutting and serving in the evening will mean you need a bigger cake for the extra numbers. And what if you want to serve the cake as dessert? AHHHHH!
Okay let’s breathe. It’s only cake (did I really just say that??).
One option to solve the issue of the evening guests missing out on seeing the cake is to do the cake cutting photos after the speeches, but don’t have the cake taken away and cut. Instead leave it until all the evening guests have arrived and seen it. Then give the venue the nod to take it off and cut and serve. You could even do the cake cutting again for the evening guests, why not?
Basically what I’m saying is to forget the traditions surrounding when you should cut and serve the wedding cake. Do it as and when it feels right for you.

Myth Busting.

Now I think we should quickly bust the myth that serving the wedding cake as the dessert will lower costs. Realistically this often isn’t the case. When we work out the size of cake you will need for you 100 guests (number just to illustrate) we will be basing that on the industry standard of a 2x1in portion. In other words a finger size portion you might serve with the after dinner coffee, or as part of a buffet. If you want to serve as dessert you’re going to want much larger portions, maybe even twice that size, but at least 2x2in. And you will also need enough cake for every guest, rather than the usual rule of thumb that 10% won’t eat any. This is going to mean a much larger cake to accommodate the larger portions, and numbers, and make sure there’s enough. Obviously this also means the cost of the cake is going to rise quite considerably. Plus the venue, or caterer, might charge you for serving someone else’s food, as they will be using their cutlery and crockery to serve the cake, and then wash all that up after, plus the service time. Add all that up and it’s not necessarily going to save you any money. But it will mean that all the cake will get eaten, and you won’t have to worry about wastage.

Back to size, as this is what this post is mainly about.

When I talk to couples at wedding shows they often think they can’t book the cake because they aren’t sure yet exactly how big it needs to be. This is another myth. And it can often mean you missing out on getting your preferred cake maker because you’ve waited until all the RSVPs have come back before getting in touch. A rough idea on size is all we need at the very start. And if you’ve booked your venue then you already know the kind of size your wedding will be. That’s enough for me to give you a starting quote to base the booking fee on (I work on a 25% booking fee) Then we can up or down scale the cake size later if you find you need to. A good rule of thumb is to take the number of guests on your list and reduce it by 10% when booking the cake, as mentioned before. Although it will need to be for 100% of your guests if serving for dessert.

The Showstopper.

But size isn’t just about the numbers, it’s also about the look. And adding the WOW factor.
The cake is, without doubt, one of the stars, a showstopper. And often the most photographed thing after the couple, and the dress. So you may want something big and impressive, even if it’s only going to be a small wedding. How to do this without having lots of wasted cake? Firstly will it be wasted? The tradition of keeping a tier of the wedding cake for a christening is starting to come back. Or maybe for your first wedding anniversary? You can do this with fruit cake of course, but also with sponge. Sponge cake freezes really well, you’ll just need to give the fondant (if using) time to dry out as it will go sticky as it thaws. You cake maker will advise you on the best ways to store your leftover cake. Then there is the other tradition of posting cake to people who couldn’t make it to the wedding, something else you may wish to do if you have cake left. If none of these are options, then there are dummy cakes. Dummy cakes are used for display cakes for shows and photo shoots etc, but they can also be used to add height and size to a real cake. Now they are usually polystyrene, however I will happily take them back and reuse them in my display work. I reuse my dummy cakes over and over, I can’t remember the last time I bought any!

The opposite can also be an issue.

You have a lot of guests to feed, but want an understated wedding, so don’t want a huge cake. Again there is a solution. Cutting cakes. A cutting cake is a simplified version of the actual wedding cake. Usually a square or A4 size cake in the same flavours and with a covering of the chosen icing, but without all the decoration as they won’t be on show. These are kept in the kitchens and cut up by your venue when they take the wedding cake away to cut, then it’s all served together. No one will know which is wedding cake and which is cutting cake.

Top Tips.

So my top tips for getting the wedding cake size right;
1/ Don’t wait until you have all your RSVPs back before booking your cake. Rough numbers are all we need to get the ball rolling.
2/ Decide if you want to serve the cake as dessert or as part of the buffet/with coffee. This will make a difference to the size of cake you need. Just let your cake maker know.
3/ Don’t worry about leftover cake. Sponge cake freezes well, and fruit cake keeps for months.
4/ You can have a showstopping cake even if you don’t need one. Again just discuss this with your cake maker.
5/ You can have cutting cakes for the venue to serve should you want something simpler and smaller, but have lots of guest to feed. This works especially well for large evening receptions after a smaller wedding.

It’s the end of another year!! Where has that gone?

2019 is almost over and so I thought I’d do a recap and a roundup of the year at STHQ. It’s been quite a year of changes for me. Here is my 2019 review

And a bronze at Cake International in collaboration with two other local cakers, proving there really is collaboration over competition.

Not bad for a one woman show! It’s only when I look back like this that I realise how far things have moved on in a year.

Moving on.

The moving was quite literal! And not planned. But I think the best decisions are often not planned.

As you know I am now based out of the stunningly beautiful Clovelly on the North Devon/Cornwall border. Before you gasp at this, I’m up the top! There was no way I was going to be trying to take cakes up and down that hill and cobbles…… been there….. done that….. in the back of the open backed Landover….in reverse. That’s another story for another time though.

It happened by accident, if these things are ever really accidents. One of my best friends lives in Clovelly, also up top. We had been to the cinema to see Marry Poppins Returns (as two grown women, with no children in tow) I was dropping her home and happened to look across the car park to the row of shops that are there. One was obviously empty, so I asked her about it. The next day she took it upon herself to email John (the estate owner) and CC me into it, telling him that I was interested. I am so very glad that she did!! Now I had never really thought about having a business premises outside of the ‘cake nook’ at the back of the house, but it was clear I was outgrowing that. Had Em not been so proactive I may still be annoying the family with cake stuff all over the house, and moaning that I have no space. It has turned into one of the best things to have happened this year. And you can now come and see me there to talk about your wedding cake. The views are just breath-taking, and you can go and look around the village afterwards.

Decisions Decisions. 

Another snap decision was joining The Wedding Gallery in London. I knew about it, and had been following them on Instagram. I knew it was the most amazing place, and also that it was quite exclusive. A girl can dream. However I was at a NAWP meeting (national association of wedding professionals) and got chatting to a wedding planner there. She said I really needed to go and see them at The Wedding Gallery, especially as it was literally just around the corner. So I did. I turned up, introduced myself, told them a fellow NAWP member recommended I visit. They were so lovely and welcoming. Hannah showed me around and said that if I wanted to become a member, they would be delighted to have me. And so I did just that! And it’s another decision I am very glad I made.

I would say around 75% of my couples are London based, even thought they are getting married here in the South West. And many are unable to get down to see me in person. I’ve done countless weddings where I haven’t met the couple at all, and that’s a shame. So being able to have a London base that I can use to meet with couples has proved invaluable. I’ve already met several couples there this year, and hope to meet many more.

More Decisions!

When you are a sole trader you have to make a lot of decisions about how to structure your time. And one thing I did this year was to cut down on the number of wedding fairs I decided to do. I enjoy wedding fairs, but there are so many of them, and only one of me. One opportunity I did say yes to though, was to exhibit at South West Wed Meet Up. I always try to go to these industry networking and training events, and the March one is the biggest one of the year. This year it was at Deer Park near Honiton over two days, with lots of workshops and guest speakers. There’s also the chance to exhibit to your fellow industry professionals, and they asked me.

Again I said yes, and again it was a good decision. Also attending the event was the lovely Anisha from BrideLux, who curate some of the worlds most luxurious wedding shows. My cakes clearly impressed her, as she asked me if I would like to be part of future BrideLux shows. Sadly I’ve not managed to do that yet, but it’s on my list. And, in the meantime, she invites me to their stunningly beautiful industry events. They pride themselves on only working with the best, so being on their radar, and included in their world, is an honour.

Celebrity Love.

Now you may have noticed on the intro list that I mentioned a couple of celebrity cakes? Well one I can talk about, and one not. Well I probably could, but I won’t.

Back in the new year I got a phone call about a wedding cake. Nothing unusual. We chatted cake, date, venue etc as usual. It was the bride I was talking to, she gave me her name and then said that the wedding was probably going to be featured in Hello! Magazine. This took me back for a second as I hadn’t recognised the name, but then I’m not good with names in general. It turns out the wedding was of top model Jade Parfitt, and was attended by other super models and society figures. And it was indeed featured in Hello! A five page spread with a full page just of the cake cutting photo!

The other celebrity cake? Well it was a birthday cake, and all I’m going to say is Hollywood A list, and leave it at that.

What a Year!

In between all of this I seem to have done 42 wedding cakes! I didn’t realise it had been this many, although I knew it was a busy year. My feet and knees will attest to that! I’ve been so very lucky to be able to work with some truly lovely couples this year. It is always my pleasure to be able to be a part of such a special day, and to help create beautiful memories. Every wedding, and therefore every wedding cake, is unique, and that’s part of what makes my job so special.

All in all it’s been quite a year! Behind the scenes there’s also been a lot going on, and I’ve relied on my work to keep me going. My husband and the man I’ve been with since I was 17, has been battling prostate cancer, then went and got facial shingles, which gave our son chickenpox! So, although the above reads a bit like a dream, it’s not all been good. Life never is. I’d hate you to think this is a smug post about how wonderful things are, because there’s been parts of this year I wouldn’t wish on anyone. But I have also been very lucky.

If 2019 has taught me anything, it’s to celebrate the wins. I hope you have many things in 2019 to celebrate, and that there’s even more of those moments in 2020.

Luxury Wedding Cakes – Christmas weddings.

Christmas weddings are the subject today.

With the big day just around the corner, we are all thinking about Christmas in one form or another. And, for some, it’s also the countdown to their wedding day.
I’m originally from Northampton, and many of my family worked in the shoe factories. This meant they were quite limited with time off and holidays, and so Christmas was one of the few times families all had time off together to celebrate a wedding. And so Christmas weddings have featured a lot in my family history.
Of course, these days, we don’t have such restrictions on when we can have time off work. But there is still something magical about Christmas weddings. Actually I love winter weddings in general. But then I am a winter person, it’s my favourite season. I do wish we had had a winter wedding ourselves, but we conformed to the norm of the summer wedding. This was in part because so much of both our families are still up in Northants, and so summer was easier for them to come down. And they liked the excuse for a summer holiday in Cornwall.

But back to Christmas weddings. I’ve been lucky enough to do a few over the years, and they are always just stunning. And I’ve got another one this year, which I’m looking forward to.
The fact that the venues are already decorated and dressed for Christmas is a huge bonus too, and a stunning backdrop for the wedding photos. It’s also a great way to get the family all together, wedding and family Christmas combined. The evening before the wedding spent together, exchanging gifts and catching up is a lovely way to start both celebrations.
Are there down sides to a Christmas wedding? Well yes, of course there are. And as I’m all about banishing the stress, I’m going to keep it real and offer some solutions.
Christmas is a very busy time of year for most people. So, if you’re thinking of a Christmas (or December in general) wedding, then give your guests plenty of notice that that’s your plan. Also think about booking your venue well in advance too. Many wedding venues also host other events, such as Christmas parties, and so will get booked up as quickly as they would in the height of the summer. Also give your chosen suppliers plenty of notice. A lot of us in the wedding industry are sole traders, or have only a small staff. Don’t be offended if suppliers say no to taking on Christmas weddings, especially if they are very close to the 25th. But, if we have plenty of notice, then we can look at the logistics. Oh, and good suppliers won’t charge you more just because it’s Christmas.

So the biggest piece of advice about booking a Christmas wedding? Book REALLY EARLY!
Another big issue for any winter wedding is the weather. Although, recently, that seems to be an issue at any time of the year! But you’re more likely to get unromantic weather in the depths of winter. So you need to have a discussion with your venue about a ‘plan B’ if the weather means you can’t get outside for photos. The advantage of a Christmas wedding is that there will be the Christmas tree and all the decorations, maybe a real fire etc, which will make for wonderful wedding photos. Have a chat with your photographer too.

Winter also means dark nights. Look at where your guests will have to park. If it’s any distance from the main venue, especially if it’s a country house or hotel, then maybe think about torches for your guests to get safely back to their cars. I can think of several country venues I’ve been to over the years, where there’s an unlit path from the car parking area.
From a cake makers standpoint, winter weddings mean that venues have their heating on. I turned up to one venue a year or two ago with a semi-naked cake. I was shown to the cake table, only to see a space heater right under it!! I asked if that was going to be used? When I was told it was, I told them they were going to have to move it. Can you imagine?? Think carefully about where you’re placing the cake table, and make sure it’s not near any heaters or radiators. Cakes are made of lots of things that like to melt if given half a chance! It seems like an obvious thing, but it happens all too often. I have the same issue with windows in summer.
Keeping warm might also be an issue for your guests if you’re having any part of the wedding outside. You would hope they would dress accordingly, but it’s a wedding, so style often wins out (I’ve been guilty of this!) Some venues may offer bundles of blankets for winter weddings, so it’s worth asking about. If not, then ask your wedding planner if they can supply them. Mulled wine would also go down well to keep everyone warm and happy.
Talk of mulled wine brings me to the food and drink. Of course there will be fizz, it’s a wedding. But I’m sure hot drinks will also go down well, think cosy winter favourites. Mulled wine, hot cider, Irish coffee, and warm, spiced apple juice for those not drinking. And the food can reflect the season too. I think this is important at any time of year, seasonal food is always better, fresher, and seems to have more flavour. Your caterers will be experts at this.
Of course, as a cake maker, I’m going to have to touch on cake flavours for winter/Christmas weddings. One of my most popular flavours this time of year is my sticky toffee cake. This is just a warm hug in cake form! A spiced carrot cake works well too. And you can always go all out and combing the wedding cake with the boozy, fruit loaded Christmas cake. Plus you can use the smallest top tier as your first Christmas cake as a married couple.
There are so many good things about Christmas weddings. You’ll have Christmas lights, decorations, trees, Christmas food, mulled wine, real fires, carols and lots of sparkle and magic. You might even get snow!

Luxury Wedding Cakes….. Devon. Cornwall. London

You would think that winter would mean that things go quiet for a wedding cake maker. But no such luck!! It’s only the second week of December and it has already been a whirlwind! And yet not a single wedding took place, so why so busy?
Well when we aren’t making wedding cakes, we are networking with fellow wedding professionals and talking about wedding cakes! And also meeting other suppliers in other parts of the wedding industry, which is fascinating. And getting to know others in the industry gives us a useful ‘little black book’ of contacts to call upon.

As you probably already know from other posts, I’m a professional member of The National Association of Wedding Professionals (NAWP). And I’m also a member of The Wedding Gallery in London. This means I’m also on the radar of BrideLux, who run amazingly beautiful wedding shows. And they also hold industry networking events in some of the most exclusive venues in London. And last week I was invited to ‘Christmas at the Connaught’ for their Christmas party.

I adore London at Christmas, and so it wasn’t a hard decision to say yes! And it didn’t disappoint. I’m always impressed with the Christmas lights in London, it really is quite magical. I wish I could take better photos to do it justice! But I’m a cake designer, not a photographer.

It wasn’t all about business and networking though. We fitted in a show and some shopping as well. Of course! Oh and I NEED those flying teacups in the Clovelly studio!!! Watch this space……. Marry Poppins was amazing too, I can recommend going if you haven’t already.

Back to the wedding industry related stuff though. BrideLux pride themselves on only working with ‘the best in the industry’, and so it’s always an honour to be included in that list of invitees. And the invites themselves are beautiful and always go on the studio wall.
The weather was kind too, and so the cab ride to The Connaught became the start of the evening. Passing all the other hotels and building lit up for Christmas. There’s something about a black cab ride around London after dark that will never get old. And then arriving to be greeted by a delightful doorman (that job must get very cold!) got the evening off to the perfect start.

I’ve never been to The Connaught. Been past, but never inside for some reason. I wasn’t disappointed. The party was in the Mayfair room downstairs in the basements and was decorated to perfection in the evenings theme of ‘Icy Elegance.’ There was even an ice cream bar and an ice sculpture, beautiful. It was work, honestly! Although it’s downstairs, it is still a great space for a wedding, especially if you wanted live music, as you won’t be disturbing the rest of the hotel.
As always there was a great turn out of people, some regulars, and some new faces. It’s always so good to meet new people, as well as to catch up with people who I’m pleased to now call friends. One person I got to chat too this time was Rosalind Miller of Rosalind Miller Cakes. Now Rosalind is wedding cake royalty, so it was a thrill for me to get to chat to her. And she is really lovely ?

Sadly I couldn’t stay until the end, as I needed to be up the next morning for a meeting with The Wedding Gallery. I do try to fit as much as I can into each trip! So the next morning I headed to 1 Marylebone to meet with Monica. I can’t say too much about this meeting, as details are still to be confirmed, but it should mean I’ll be seeing more of my London base.

I was home a whole three days before heading back up to Paddington! They must be starting to get used to my face there by now (well in Starbucks anyway.) I was heading back to The Wedding Gallery for yet more meetings! This time it was with two lovely couples who were unable to get down to Clovelly to meet and discuss their cake. This was my main reason for asking to become a member of The Wedding Gallery (you can’t just join, you’re invited or ask and are approved) so that I could meet with the many London based couples I work with. Devon and Cornwall really has become the ‘go to’ destination in the UK to get married.

They always look after you so well there, nothing is too much trouble. And you can stay and get everything else for your wedding while you are there, you can even book your honeymoon. I would recommend having a good look around while you’re there.
Was I tired by the time I got home? I won’t lie, I was exhausted. But it was all worth it. And I’ll be doing it all over again in the New Year.
